  1. Soak chickpeas in water containing 1/2 teaspoon of baking soda overnight.
  2. Rinse chickpeas fresh water and boil for one hour or until check peas get soft.
  3. While still hot, add the chickpeas into a food processor, add Tahini paste, garlic, salt and lemon juice process until creamy and smooth.
  4. Spread the dip in serving plate, drizzle with olive oil and garnish with chopped parsley, sumac and a few whole cooked check peas. Serve with pita bread.
