Hummus

Ingredients
- 1/2 pound chick peas
- 1/2 teaspoon baking soda
- 1 clove garlic, minced
- 1/2 cup tahini paste
- 1/2 cup lemon juice
- 1 teaspoon Sumac (Summaq)
- 1 teaspoon salt (or to taste)
- 2 tablespoon olive oil for garnish
- Parsley for garnish
Directions
- Soak chickpeas in water containing 1/2 teaspoon of baking soda overnight.
- Rinse chickpeas fresh water and boil for one hour or until check peas get soft.
- While still hot, add the chickpeas into a food processor, add Tahini paste, garlic, salt and lemon juice process until creamy and smooth.
- Spread the dip in serving plate, drizzle with olive oil and garnish with chopped parsley, sumac and a few whole cooked check peas. Serve with pita bread.
