Lentil Soup

Ingredients
- 1 cup dry red lentils
- 3 tablespoons of Olive Oil
- 1/2 cup finely chopped onion
- 1 tablespoon ground cumin
- 4 cups of water
- 1/2 teaspoon of salt - to taste
- 1/2 teaspoon of pepper - to taste
Directions
- Thoroughly wash the lentil with cold water and drain it.
- Sautee the chopped onions with olive oil until translucent.
- Add lentil and stir with onions for a minute or two.
- Add 4 cups of water.
- Cover the pot and let it cook at low-medium heat for about an hour OR cook for 30 minutes in pressure cooker. (If you like the soup thinner, you may add one extra cup of hot water and boil the soup for one or two minutes).
- Add spices, salt, and pepper to taste (about 1 tea spoon salt and ½ tea spoon pepper).
- Serve hot.
