Mojadara

Ingredients
- 1 Cup dry whole green lentils
- 1 1/2 Cup bar boiled long grain rice
- 1 Large onion cut into thin wedges
- 1 Tablespoon ground cumin
- 1/2 Teaspoon ground pepper
- 1 teaspoon salt (to taste)
- 4 Cups water
Directions
- Rinse and drain the lentils.
- In a saucepan heat the water to boil, add lentils and cook for 10 minutes. Add salt, cumin, black pepper and the rice, stir gently, cover the pan and cook over low heat for 30 minutes.
- In a skillet, add 3 tablespoons of vegetable oil or olive oil, fry the onions to golden brown. Remove the onion and place on a paper towel.
- Take 2 tablespoons of the hot frying oil and sprinkle on top of the rice in the pan.
- Serve the Mojadara in a big serving plate with the fried onion on top.Mojadara may be eaten with green salad and/or yogurt.
