Ingredients
- 1 Large eggplant
- 1 Clove garlic, minced
- 1/4 cup tahini paste
- 1/2 cup lemon juice
- 1 teaspoon salt (or to taste)
- 2 tablespoon olive oil for garnish
- Mint leaves or parsley for garnish
Directions
- Place the eggplant as is directly on the stove-top or grill at medium heat. Leave it roasting and keep turning from side to side until the skin is blackened and pulp is soft and tender. This process should take about 30 minutes.
- Peel the eggplant under running cold water in order to remove the skin easily. Trim the stem off from the eggplant and remove the seeds (if any).
- Put the eggplant in a food processor. Add garlic, salt, tahini, lemon, and 1/4 cup of water. Mix all ingredients at medium speed. Taste to adjust salt and lemon add more water if needed.
- Spread the dip in serving plate, drizzle with olive oil and garnish with mint leaves. Serve with pita bread
